Our Story

We don't bake to fill shelves. We bake to fill moments.

Nachos Bakery started with a simple conviction: that a truly great pastry shouldn't be rushed. Every croissant is laminated by hand. Every sourdough loaf ferments for 24 hours. Every batch of coffee is pulled to order.

We're not a chain. We're not trying to be. We're a small team on Bastrop Highway who believes that showing up early, paying attention, and caring about the details makes all the difference between something edible and something unforgettable.

The Process

From flour to first bite

Sourcing

We work with local mills and Texas farms for our flour, dairy, and produce. Quality starts before the oven even turns on.

Mixing & Laminating

Every dough is mixed, rested, and folded by hand. Croissants get their layers at 5am, not at noon.

Fermentation

Sourdough sleeps overnight. Viennoiserie proofs slowly. Good bread can't be rushed, and we won't try.

Baked & Served

Out of the oven and onto the counter. That's when the real magic happens — you take the first bite.
